{"id":3366,"date":"2010-01-28T19:47:53","date_gmt":"2010-01-29T02:47:53","guid":{"rendered":"http:\/\/osbornz.net\/amy\/?p=3366"},"modified":"2010-01-28T19:47:53","modified_gmt":"2010-01-29T02:47:53","slug":"tonights-dinner-another-chicken-aka-white-chili","status":"publish","type":"post","link":"http:\/\/osbornz.net\/amy\/?p=3366","title":{"rendered":"Tonight&#8217;s Dinner: Another Chicken (aka White) Chili"},"content":{"rendered":"<p>This one is NOT for the crockpot but we liked it more than <a href=\"http:\/\/osbornz.net\/amy\/?p=3336\" target=\"_blank\">the last one<\/a> we tried.<\/p>\n<p>\u00c2\u00a0<\/p>\n<h1><strong>White Chili<\/strong><\/h1>\n<p> <span style=\"text-decoration: underline;\">Ingredients:<\/span><\/p>\n<ul>\n<li> 1 pound Great Northern white beans (or 4 cans of white beans)<span style=\"color: #000000;\"><strong><span style=\"color: red;\"><strong> <\/strong><\/span><\/strong><\/span><\/li>\n<li> 2 pounds boneless, skinless chicken breast\u00c2\u00a0 (<em>I used leftover turkey and chicken and guesstimated the amount<\/em>)<\/li>\n<li> 1 large onion, chopped<\/li>\n<li> 2  4oz. cans of mild chopped green chilies<\/li>\n<li> 4 garlic cloves, minced<\/li>\n<li> 2 Tbsp. olive oil<\/li>\n<li> 6 cups fat-free chicken broth<\/li>\n<li> 2 Tbsp. ground cumin<\/li>\n<li> 2 tsp. dried oregano, crushed<\/li>\n<li> 1\/4 tsp. cayenne pepper<\/li>\n<li> 1\/4 tsp. ground cloves<\/li>\n<li> 3 cups shredded Monterey Jack cheese<\/li>\n<li> Sour cream<\/li>\n<li> Salsa<\/li>\n<\/ul>\n<p> &#8211;  Soak beans in cold water overnight.<\/p>\n<p> &#8211; In large pot, heat 1 Tbsp. olive oil over medium heat and saut\u00c3\u00a9 onions until translucent. Stir in garlic, chilies, cumin, oregano, cayenne pepper, and cloves and cook an additional 2-3 minutes.<\/p>\n<p> &#8211; Drain beans and add to pot with chicken stock. Bring to boil and reduce heat. Simmer about 2 hours until beans are tender, stirring occasionally.<\/p>\n<p> &#8211;  While beans are cooking, saute chicken breast in 1 Tbsp. olive oil.  Let cool, then cube.<\/p>\n<p> &#8211;  After 2 hours, add chicken and 1 cup of cheese to chili and stir until cheese melts.
