I like the idea of healthy food in 30 mins! I’m not a cook…I watch cooking shows though! 😉 My favorite – well, my second favorite is Rachel Ray’s “30 Minute Meals”. My favorite is Alton Brown’s Good Eats! Science + food = smart fun!


On the food theme…tonight we are having Tuna Linguine…a super-fast, yummy meal that everyone enjoys! Try it on your family!

TUNA LINGUINE
1/2 cube butter
1 clove garlic
1 dash cayenne pepper
1 tsp parsley
1/2 c parmesan (not the shaker kind – the shredded kind)
1 can tuna (we prefer albacore)
Linguine NoodlesCook noodles according to package instructions. Saute tuna and garlic in butter. Add cayenne and parsley. Mix with noodles and sprinkle with parmesan.

In real life…we are having some problems with J1 – we are calling a counselor to see if they can help us. He’s had some issues from his very early days (he joined our family at 17 mos old) and losing his little brother a few years ago have not helped. I think oncoming puberty is slightly scary to him too. I’m worried for him and the choices he is making. I would definitely appreciate prayer for patience, understanding and wisdom!

Last night I told my new-found friend (she’s not truly a new friend as we were buddies at some point in high school and lost touch – for the life of me I can’t remember why – hope it wasn’t a fight – probably just a drifting away)….Anyway, on the way home from knitting I found myself telling her about the circumstances surrounding Josh’s death.  And, I didn’t cry!

That’s quite a milestone for me!
