I’ve heard from several friends who have tried to leave comments and couldn’t – and I really love to get those comments!! SO, I’m going back to unprotected method (sigh). I can’t seem to find any other way! So, I’ll take the good and the bad – at least I can delete the bad before anyone else sees it.

Perri tagged me – and asked me not to send any hitmen! lol Since it’s so close to her birthday, I guess I’ll let it slide! So here we go – first the rule:

Amy’s 5 weird habits

1) I feel a moral responsibility to reply to every tag I EVER recieve. Now that is weird!! 😉

2) If there is anything remotely scary on tv or at the movies – I cover my eyes with my four fingers and put my thumbs over my ears – just like I’ve done since I was 4 years old!

3) I like refried bean sandwiches! What? You’ve never had one? lol Well, that just means you were never as poor or creative as we were! 😉 Cold refried beans on whole wheat bread with a dash of salt – yum!!

4) I love Mythbusters – I love these geeky science shows! And, you never know what you are going to learn from them! Did you know that ginger beat EVERY other form of seasickness medicine out there – for someone like me that’s good news!

5) I can’t drive and laugh at the same time. I have what my family calls “smiling eyes” and I literally can not see when I’m laughing! How’s that for weird?

And who to tag? How about Beth, Sara, Theresa, Debra and Roe!

Yes, life is busy right now – but it’s still fun to play! And, on that note, my friend Perri (who’s obsessing over Duke – declaring her love and loyalty! lol) sent me a recipe exchange that she got from Tee (who’s blog I had somehow missed over the years but I’m going to add to my reads!!)

I sent over my sister’s Taco soup recipe (hey, SHE shared it with me – she can find a different recipe to share this time!! LOL) to both Tee & Perri and figured that would be the end of it. I mean, seriously, does anyone but me reply to this things?

Well, yes they do!! My sister must have replied becuase her friend Cathy (sorry, no blog 🙁 sent me the following recipe! I can’t wait to try it! She agreed to let me share it here!! Enjoy!!

** This recipe was created by my husband’s mother. It is a fantastic blend
of flavors. It is really good the next day as well. Tom’s father likes it
the next day placed between two slices of his favorite bread for a tasty
sandwich – yummy!

Irene’s Chili Meatloaf Mozzarella
From Tom & Cathy Burge

Mix together the following ingredients, shape mixture and press out into rectangle.

2 lbs Ground Round

7 oz can of sliced mushrooms – drained

1 egg

½ cup plain bread crumbs

1/3 cup milk

7 oz green chili salsa verde (save some to top the meatloaf)

salt & pepper to taste

After the above mixture is rolled out, layer the following on top of the meat mixture:

1 large can seedless green chili fillets

mozzarella cheese slices

Roll meatloaf and seal the ends. Place seam down in baking pan. Top with shredded mozzarella and additional green chili salsa verde. Bake at 350 for 1 ½ hours.
