Tonight we tried a South Beach Diet Chicken Chili that I found online (no idea where) and modified a bit.  It was great and I’m looking forward to serving it again!  AND, it’s for the crockpot!  Woot!

Chicken Chili

  • 3# skinless chicken breasts
  • 1 large onion — chopped
  • 2 garlic cloves — minced
  • 2 – 14 1/2 ounces chicken broth
  • 1 can diced green chilis (mild for my family)
  • 2 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon hot sauce
  • 2 cans Great Northern beans, drained
  • 3 tablespoons lemon or lime juice

1. Mix chicken broth, onion, garlic, cumin, salt, chilis and hot sauce. Place in Crockpot. Add chicken breasts. Cover; cook on low for 4 to 5 hours.
2. Remove chicken breasts when tender. Dice into small cubes. Return chicken to Crockpot; add beans,(optional corn), lemon or lime juice. Cover; cook on low until all contents are hot. If desired, garnish with a sprinkle of LF cheese, a dollop of ff sour cream

Yeah!! 2 more lbs are gone!!

I’ve lost 17.5 lbs so far!

I’m prayerfully considering giving myself a Kindle when I lose 55 lbs (1/2 way)….but it’s pretty expensive, so we’ll see if I can pull it off!

So I love that I have been able to link my Twitter account and my blog together.  Now you all can see what I’m thinking/saying throughout the day.  But I do feel a bit guilty about it too.  But to be honest, there is just no time.  In fact, I haven’t worked out in almost two weeks now due to that issue.  Where does my time go?  Well, I decided to figure it out.

I sleep about 8 hours a night.  I realize that makes me pretty unique in today’s world.  But since being diagnosed with Sleep Apnea and able to sleep at night again, I really try to go to bed and wake up at decent hours.  I will never again let myself ever get so messed up from lack of good sleep.

So 24 minus 8 is 16.  16 hours to do everything else.

I work for about 4 hours a day.  12 hours left.

Homeschooling takes about 4 hours a day all together.  8 hours left.

Housework, including cooking, cleaning up, bills, etc takes about … ok, this is hard.  But I’m going to round up to 4 hours as that is the minimum on laundry day.  4 hours left.

I am careful to get 1 hour of knitting and Bible study in a day – not at the same time (well, the prayer time I can knit too but the Bible study – nope, haven’t figured that one out yet! lol). I will not give up either as they are both very necessary to my well-being.  3 hours left.

Entertainment.  Ok – this could be my problem.  I probably spend about 2 hours a night hanging out with my husband and watching tv (and knitting – I *did* figure that out and I feel less guilty about this down time).  1 hour left.

OK…there is my one hour of working out.  I can do it.  But in the day-to-day of my life, there is just no downtime.  After my Bible study in the morning, it’s go-go-go-go-go.  I can often sit down with my knitting in that sweet spot of about 4pm each day and Hubs will get home and we can chat for a few minutes.  Then it’s up to cook dinner and go-go-go-go-go again.

I think I need to feel about my work out like I do about my Bible study and knitting.  It needs to be very necessary.  And, it’s just not.  Do I hate myself so I won’t take care of myself?  I don’t hate working out – in fact, I love our gym and the high I get afterward.  But I still struggle with doing it all.  And things for me come last.

You know what?  I’m going to go wake up the boys to watch their sister and I’m going to the gym right now.  Why sit here on my big bum and whine about not having time and just go do it!

I hope I don’t pay for it later when I’m horribly behind!

Friday, I took J2 and J3 to some homeschool friend’s for a sleepover in Davis.  And, Eric brought home one of J1’s buddies from NCS to spend the night.  We had a really great dinner of pork loin chops in a garlic soy marinade, salad and green beans….unfortunately J1’s friend does not like veggies! :-/

Saturday I had hoped to wake up early and hit the Farmer’s Market in town.  But a headache kept me from going anywhere in the morning.  I made some great scrambled eggs with onions, mushrooms and peppers but again, that was veggies.  I was starting to worry the kid would fall over from not eating!   :(  But he seemed to enjoy his lunch of grilled cheese (Eric and I had the left over chops in a green salad), we gathered up J1, Sissy and J1’s friend and headed to Dixon to take his friend home.  Then to Davis to pick up J2 and J3.  And, then to Sacramento to pick up Bryan…Eric’s brother’s youngest son.  In about 1.5 hours we hit 3 different counties! lol

When we arrived back in Woodland, we took Grandma O her birthday gift and somehow lost Bryan.  I guess the promise of Grandpa’s pancakes Sunday morning was too tempting. (or maybe the word is out about veggies at our house! lol)

We had a very rushed dinner and then went to the Yolo County Fair…you can see pics from our evening in this post.  We were headed to the East stage where the family was gathering to see Eric’s brother Mike in concert with one of his bands “Texas Hold’em”.  It was really very loud but lots of fun.  3 of Mike’s 4 kids were there and we got to meet Annika’s boyfriend, Ray.

Afterwards we gave the older boys some money and they were gone!  J3 took off the Aunt Annie to see some rides or games.  Eric and I put Sissy in her stroller and checked out a few of the exhibit halls.  Then we meet up with Aunt Annie, Alese (Cousin) and the boys.  The older boys took off with friends after receiving a new meet-up time.   J3 and Carson (Cousin) rode the Ferris Wheel and climbed a rock wall. It was a nice evening – it cooled off so nicely.

Today was church – and I had a great visit with another homeschool mom who has special learners as well.  After church J3 and I got haircuts.  I sort of celebrated by taking a good 2 to 3 inches off.  And, J3 went from this

Then after Sissy woke up we went over to G & G O’s house.  Unfortunately Mike and Eric found out that the guns they were storing at their Dad’s house got moldy and had to spend all afternoon doing what they could to try to save them.  It was pretty depressing but hopefully they are going to be ok.  I ended up taking Bryan back home to Sacramento so I made Sissy and J1 come with me.  J1 and I had a great talk about a certain girl at the fair who was very huggy and even blew him a kiss! Oh my!  I think he wants to invite her to youth group.  I’m pretty much in freak out mode!  I long for the days that they believed me when I told them that it was against the law to kiss anyone until you were 30 years old.

Tonight for dinner, Eric grilled some turkey burgers and I sauted some zucchini and made a big green salad.  I worry that I didn’t eat enough today and I might see no change or even a gain on the scale.  I notice that the days where I don’t have time to eat 3 meals and 3 snacks, that the scale is not my friend.  The day after a day where I was careful to eat all my meals the scale is my friend!  Doesn’t that sound weird?

I made some changes to my blog a bit today – I combined all my hobbies into one tab, made my favorite posts link private, and created a Getting healthy tab.  Right now it only contains my weight loss ticker, but I hope to share some links and some things I’m learning.

Well, since Sissy finally fell asleep, I can get some knitting done!  Later y’all!
