Our CSA box has been overflowing a bit in the cucumber department!  Ruth and I were talking about how we are using them up and I mentioned that I had found a pickle recipe that seemed pretty simple.  So, if you have  a bumper crop of Cucs and enjoy pickles – maybe you’ll enjoy this recipe too!

Quickie Pickles

  • 8 cups cucumber
  • 1 cup onion
  • 1 cup green bell pepper
  • 2 cups sugar
  • 1 cup vinegar
  • 2 tbsp salt
  • 1 tbsp celery seed

Cut vegetables very thin.

Combine sugar, vinegar, salt and celery seeds. Mix well.

Pour mixture over vegetable. Cover and refrigerate for 5 days.  Stir mixture twice each day. Serve after 5 days.

  1. I hope they turn out delish. My mom used to make bread and butter pickles out of too many cucumbers – they were to die for. Sorry, no recipe to pass along and mom passed away, so cannot even ask her.

  2. We LOVE this recipe. It is a family favorite, and we have it in the fridge all summer long. We just keep a bucket of it in the fridge, and when we get new peppers or onions or cukes, we just slice and add them. Usually once or twice (depending on the amount of veggies we have) we end up making a fresh batch. YUM! Hope you enjoy it!
