I found this one on the Taste of Home website. It looked pretty simple and it was wonderful with some homemade breadsticks!  I’m blogging it so I will have a record of it for next year!

Homemade Turkey Soup Recipe

  • 1 leftover turkey carcass (I also threw in some of the leftovers like wing tips)
  • 2 quarts of water (I just covered the carcass)
  • 1 medium onion, halved
  • 1/2 tsp salt
  • 2 bay leaves
  • 1 cup chopped carrots
  • 1 cup uncooked long grain rice
  • 1/3 cup chopped celery
  • 1/4 cup chopped onion
  • 1 can (10.75 ounces) condensed cream of chicken soup (or cream of mushroom), undiluted

Place the turkey carcass in stockpot; add water, onion, salt and bay leaves. Slowly bring to a boil over low heat; cover and simmer for 2 hours.

Remove carcass and cool.  Strain broth and skim off fat. Discard onion and bay leaves.  Return broth to pot. Add carrots, rice, celery and onion. Cover and simmer until rice and vegetables are tender (15-20 min).

Remove turkey from bones; discard bones and cut turkey into bite-sized pieces. Add turkey and cream soup to broth. Heat through.
