We found this on the back of a Betty Crocker cake mix and we love it!  Hope you do too!

Lemonade Cake

  • 1 box Betty Crocker lemon cake mix
  • water, oil & eggs called for on cake mix box
  • 3/4 cup frozen lemonade concentrate, thawed (1/2 of a 12 oz. size can)
  • 3/4 cup powdered sugar
  • 1 container Betty Crocker Whipped fluffy white frosting

Make cake as directed for 13×9 in pan.  Cool for 15 min.

Stir together lemonade concentrate and powdered sugar. Poke top of warm cake every 1/2 inch with long-tined fork.  drizzle lemonade mixture over top of cake. Run knife around side of pan to loose cake.  Cover and refrigerate about 2 hours or until chilled.

Spread frosting evenly over top of cake.

Today J2 turns 13.

That means I have 2 teenagers.

That means we are closer and closer to children leaving the nest.

This thought makes me hit my knees.

Today I’m a bit blue about his birthday.

Tomorrow we are having a bunch of his buddies over to Grandma & Grandpa’s house to play in the pool, hit a silly pinata, eat his requested lemonade cake & hot dogs and enjoy each other! I’m sure it will be lots of fun and I’ll take lots of photos to share with you. But today I’m going to hug on my boy and probably cry a tear or two.
