TerrificTuesdayWelcome to Tuesday! Is it a sunny Tuesday or a gloomy Tuesday in your corner of the world?  Whatever it is, give yourself a moment to reflect on what makes you smile! What do you enjoy?  What are you excited about?  What do you love?  Who do you love?  Write a post about it and then share it here to help others be encouraged to acknowledge the blessings around us!

With yesterday’s tragedy in Boston, I hesitated to start this today. But these are the days in which identifying and sharing our blessings can be most helpful. When we are sad and discouraged, it is helpful to see the blessings around us and be thankful for them! I hope you can do this with me. If you don’t have a blog to share in the Linky below, please use the comments below to share!

Here is what is currently making me smile!

My recent thrift store acquisition!  I love a good deal!!  And, I looooooove purses! This one is big enough to hold my iPad too!! 😀

005smAnother great deal!  I didn’t take a picture of the entire thing – it is a new Bible book cover.  But it’s the front that I love – my favorite verse in a beautiful design! And, it was on clearance! It is so perfect for me!! 😀

So, that’s it! Not too hard, right?  Don’t make this too hard.  You can write a book about your loved one or just share a line about what made you smile this week.  No rules!  ok…one rule.  Please link to the actual post and not just to your blog. If today isn’t a good day for you to share, this linky will be available for one week….and then we will start a new one.

If you have ANY questions about any of this – please don’t hesitate to contact me!

Hope you smile today!!

A family favorite from Betty Crocker’s Cookbook with our tweaks

  • 1/4 cup butter or margarine (I use less, maybe 1/8? I don’t measure anymore)
  • 1/4 cup all-purpose flour
  • 1/4 cup bread crumbs
  • Garlic Salt and pepper

Cut up whole chicken.  Heat oven to 425.  Put butter in pan and into oven to melt.

Put bread crumbs, flour and seasonings (can tweak as desired) into a bag.  Add a few pieces of chicken to bag, shake to coat and place skin side down in pan with melted butter.

Put pan in over (uncovered) for 30 min.  Turn and cook another 30 min.

ENJOY!  My kids ask for this one all the time!  In the summer, I cook it early in the morning or not at all – the kitchen gets pretty warm!

MPM-Spring

Another week of food.  ugh.  Yeah, I’m not a cheerful cook. Don’t get me wrong, I like food…but I don’t really like planning and cooking.  🙁  But I do it because I love my family and I want to give them the best I can.  Plus, when we can sit down together for a meal, it sort of ‘completes’ our day.  It’s a chance to catch up and reconnect!

This blog hop is hosted by I’m An Organizing Junkie.  Go visit and if you plan your own menu, will you share it with me in the links? I’m always looking for slow cooker meals and simple, family-tested meals!

So here is my plan for this week:

  • Monday – company here – Taco Salad & Burritos (didn’t do it last week)
  • Tuesday – company here & Daddy meeting night –  Chicken Enchiladas (J3 requested)
  • Wednesday – Tijuana Topper
  • Thursday – Knit Night! – Chicken Stroganoff in the slowcooker
  • Friday – soup & grilled cheese (I am notoriously tired on Fridays)
  • Saturday – Evening church – Breakfast for dinner! (sausage, gravy, hashbrowns, and eggs (for those who can eat them)
  • Sunday – Oven-Fried chicken (my kids ask for this ALL the time!)
