Because I never really intended to have a blog, I’ve never had a blogging anniversary.  My blog grew out of my grief and loss.  I can’t seem to tell anyone what I feel but if I pick up a pen or start to type, wow, there I am!

I had intended to work on finishing our adoption story today, but instead I’m finding myself lost in my blog.  At some point I put together a list of my favorite posts – I really don’t even remember doing it – so I added it to my menu above.  And I’m remembering why I like some of them.

Kelly’s Show Us Your Life this week is “Show Us what you are cooking right now”.

But, I’m not.  Cooking that is!  My wonderful manchild 15 yr old chef is doing that M-F and I’m skating through on the weekends! 😉 It’s marvelous!!!! 😉

But, on special occasions, I will make our family favorites and our most requested is “Oven fried chicken” from Betty Crocker’s Cookbook with our tweaks

  • 1/4 cup butter or margarine (I use less, maybe 1/8? I don’t measure anymore)
  • 1/4 cup all-purpose flour
  • 1/4 cup bread crumbs
  • Garlic Salt and pepper

Cut up whole chicken.  Heat oven to 425.  Put butter in pan and into oven to melt.

Put bread crumbs, flour and seasonings (can tweak as desired) into a bag.  Add a few pieces of chicken to bag, shake to coat and place skin side down in pan with melted butter.

Put pan in over (uncovered) for 30 min.  Turn and cook another 30 min.

ENJOY!  My kids ask for this one all the time!  In the summer, I cook it early in the morning or not at all – the kitchen gets pretty warm!
